Digital Tool for the Analysis of UV–Vis Spectra of Olive Oils and Educational Activities with High School and Undergraduate Students

UV–vis absorption spectroscopy is one of the most accessible spectroscopic techniques at high school educational level, and it usually introduced in analytical chemistry courses due to its versatility wide range applications many fields chemistry. Within this framework, we have developed an easy-to-use “simulation tool” identify quantify main pigments a relatively complex food matrix, such as olive oil seeds’ oils. This digital software, freely available, can be used by students first-year undergraduate analyze spectrum oils recorded bulk without any chemical treatment. In paper, are reporting basic principles method way use with several examples explanations that useful for teachers. second part activities about oil, realized fifth classes’ technical institute (K–12 level) introductory course year Chemistry Degree Course, reported. These were performed partially face-to-face distance learning mode during COVID-19 pandemic. The outcomes, methodological issues, students’ feedback resulting from these experiences reported commented on, showing potential simulation tool purposes.
